Bonfire Toffee

So, it’s November 5th, or Bonfire Night. 

When I mentioned on Twitter a few days ago that I’d be making Bonfire Toffee this weekend I was met with a few ‘huh?’s.  So, for the people who have never heard of bonfire toffee, it’s also known as treacle toffee as well as, according to Wikipedia, Plot toffee or Tom Trot, although I’ve never heard of those last two!

The recipe is simple.  I can do it so it has to be.


  • 300g Demerara sugar
  • 100g butter
  • 2 level tablespoons of golden syrup
  • 1 level teaspoon of black treacle
  • 4 tablespoons water


  1. Put all ingredients into a pan
  2. Heat slowly until all the butter has melted and the sugar has dissolved
  3. Bring to the boil then boil gently for 10-15 minutes
  4. Test if the mixture is ready by dropping  a little into cold water.  It should separate into brittle threads
  5. Pour into a buttered tin and leave to set
  6. Turn out and break up with a hammer
