Slow Cooker Lasagne

We’ve had a slow cooker a couple of months now and although we started off just doing stews and casseroles I’m now getting a bit more adventurous.

Inspired by Mediocre Mum’s Slow Cooker Lasagne recipe, I decided to try my own version of this out last week and I’m please to say it was a success.

I’m not a great follower of recipes and tend to have a chuck it all in and hope for the best attitude but I’ll try and remember what I did!

Ingredients:

  • Splash of oil
  • Mince (I used a large pack – approx 800g)
  • 1 large onion, chopped
  • 3 garlic cloves, chopped or crushed
  • 1 tin chopped tomatoes
  • 1 tsp mixed herbs
  • Lasagne sheets
  • Jar of white lasagne sauce (I cheat)
  • Grated mozzarella

Method:

  1. Heat the oil.  Add the mince and brown, then add the chopped onion & garlic and fry for 3-4 minutes.
  2. Add the tin of tomatoes &  the herbs and heat for a minute or two
  3. Put a layer of mince into slow cooker followed by a layer of pasta sheets (you’ll have to break these into pieces) and layer up until all the mince is used.
  4. Pour the jar of white sauce (or your own if you want to make it) on top and top with the grated cheese.
  5. Cook on low for 4-6 hours

You could also add mushrooms or carrots to the mince mixture, whatever you fancy really!

The large pack of mince was enough for 4 portions.
