As I’ve blogged before, we’re growing a few things in the greenhouses this year, the main one being tomatoes. When I planted the seeds, I only used one packet but my fingers appear to be quite green and I ended up with a lot of tomato plants.
I did give a few away but couldn’t bring myself to throw any in the compost heap, which annoyed M endlessly, as they were my babies and I had nurtured them. What I’ve now got is 2 greenhouses that I can barely get in due to the huge number of plants in there, and more tomatoes than I know what to do with.
I’ve already made some tomato and chilli chutney but this barely made a difference to the amount of tomatoes we had so I turned to google. I wanted a soup recipe but nothing too fancy or complicated so searched for tomato & basil as I have fresh basil on the kitchen windowsill.
One of the sites that came up was called A Wee Bit of Cooking which is a Scottish food blog and it had a fab tomato & basil soup recipe. I won’t repeat the recipe here, go over there and have a look!
Her picture of a bowl of soup looks far better than mine but in my defense it was taken quickly with my phone! Regardless of looks, it tasted wonderful.
