Ice Cream & Cupcakes

C and I have had a productive morning.  I said this to the husband when he got in from work but he just looked at the toys strewn all over the living room and frowned at me.

Our day began with ice cream. Well, we made the ice cream, we didn’t actually eat ice cream for breakfast.  We were sent some new make-your-own ice cream from Angel Delight to try out.  It’s really simple to make, just tip the mix into a bowl, add some milk & whisk.  We then added marshmallows, white chocolate drops and milk chocolate sprinkles, all chosen by the toddler.

Stick it in the freezer for 4 hours and it’s done.  I confess I’ve tried it while C is napping, bad mummy!  It tastes really good and I’ll definitely be buying more if it becomes available in the shops.

Next we prepared tonight’s dinner – sausage casserole – in the slow cooker.  It’s not as exciting as ice cream but it smells nice.  I love my slow cooker.  We debated whether to get one or not for about a year and now it’s one of the most used pieces of equipment in the kitchen.

After we cleared our mess up we decided to make cupcakes.  A while ago we’d been sent some cupcake mix from Betty Crocker, lemon flavour and cookies & cream flavour.  C decided we needed to make the lemon ones so we set about doing that.  I quite enjoy baking but it’s not the easiest of tasks with a 2 year old so these packet mixes are great.  You just need to add 2 eggs, oil and water to the mixture and they’re really tasty.

Trying to explain to a 2 year old that we had to leave them to cool was fairly difficult but we went and played outside for a while before returning to decorate them.  Don’t they look lovely?

So that’s our productive morning.  Didn’t we do well?  I really should get to work on the living room now though.
