Schwartz Sausage & Bean Casserole

As I wrote previously, we were recently sent a slow cooker and some new Schwartz slow cooker packet mixes to try out.  Having already tried the chicken in red wine sauce, today it was the turn of the sausage and bean casserole.

It started off badly when I realised I only had dried cannelloni beans that apparently required soaking overnight.  A quick google later and I discovered a ‘quick soak’ method that saved the day.

So, after browning some sausages I threw them in the slow cooker along with the cannelloni beans and some chopped onion, then mixed the packet mix with some water, a tin of chopped tomatoes and some tomato puree and poured it all over the top.  Put the lid on, turn on the slow cooker and ignore.

Fast forward a few hours and I was greeted by this:

Heat up some vegetables and new potatoes and you get a scrummy dinner that took hardly any preparing.
